Ingredients

1/4 cup rice flour
1/8 cup potato starch
2 tsp sugar
1/4 cup water

Directions

Mix all ingredients together. Add very small amounts of water or rice flour to get the consistency of pancakes you want.

Cook on high to medium-high heat. Coat pan with safe oil or use non-stick pan.

The pancakes come out looking more like crepes than fluffy pancakes.

Notes

My son, who is very limited in what he can eat, loves that he is now able to eat pancakes with the families.
