Ingredients

1/2 cup margarine
1 cup sugar
3 mashed bananas
2 eggs OR replacement (see below)
1/2 cup tapioca starch
1/2 cup amaranth flour
1 cup sorghum flour
1 tsp baking soda
1/2 tsp cream of tartar
1/4 tsp salt

Directions

Mix margarine, sugar, bananas, and eggs (or replacement). Add tapioca, amaranth, sorghum, baking soda, cream of tartar and salt. Mix well, and pour into 4 greased mini loaf pans.

Bake at 350 °F for about 20 minutes.

Notes

Cream of tartar is not a dairy product. It is a residue from the wine-making process. It is the acid needed to react with the baking soda for leavening.

Substitutions

The eggs can be replaced with 2 additional mashed bananas.
