Ingredients

1 3/4 cups rice or millet flour
1 heaping Tbsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1/2 cup sugar
1/3 cup oil
2 1/2 to 3 peeled, cored pears
1/2 tsp cinnamon

Directions

Mash pear in blender/food processor.

Sift dry ingredients into a bowl, then add oil and pears. Mix until blended. Add cinnamon.

Pour into standard loaf pan and bake at 350 °F for 45 mins. Cool for 15 minutes and remove from pan.

This can also be made in mini-loaf pans instead. Bake mini loaves at 350 °F for 35 minutes

Substitutions

Sugar can be replaced with or 1/4 cup honey.
