Ingredients

1 cup cornmeal
3/4 cup sweet rice flour
1 1/2 tsp baking soda
2 tsp cream of tartar
1 tsp xanthan gum
1 tsp salt
1/4 cup dark molasses
3/4 cup water
1 1/2 tsp melted margarine
1 Tbsp canola oil

Directions

Mix and sift dry ingredients. Mix wet ingredients. Combine and mix well.

Grease round pie pan (or other shallow pan) and pour batter in evenly. Bake in preheated oven at 350 °F for 20 minutes or until done.

Notes

This is excellent with jam on top!

Substitutions

If not avoiding milk, replace the 3/4 cup water with milk.
