Ingredients

1 loaf firm white bread, cut into 3/4 inch cubes
1/4 cup margarine
2 ribs celery, chopped
3 carrots, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1/4 cup apple juice
1 tsp sage
1 tsp thyme
1 tsp marjoram
1 tsp salt
1 3/4 cups chicken broth
1/2 cup chopped parsley

Directions

Preheat oven to 375 °F.

Arrange bread cubes in single layer on baking sheet. Bake, turning occasionally, 10-12 minutes or until lightly toasted, and set aside.

In skillet melt margarine over medium heat. Add vegetables. Cook, stirring occasionally, until vegetables soften, about 12 minutes. Stir in apple juice and seasonings and cook until liquid reduces slightly, about 3 minutes. Transfer mixture to bowl. Stir in bread cubes, broth and parsley.

Fill turkey body and neck cavity with stuffing. Place remainder in covered cassarole dish; place in oven about 35 minutes before turkey is done.

Substitutions

White wine can be used in place of apple juice.
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
