In large Dutch oven, heat oil. Add chicken and cook, turning, until golden. This step can be omitted. Tilt pan and spoon off all but 2 Tbsp fat. Add garlic cloves (peeled or unpeeled)and stir to coat. Sprinkle with lemon juice, thyme, salt, pepper and 1/4 cup water. Cover tightly and bake 1 1/2 hours.

This is so yummy! We usually have mashed potatoes to go along with this, and I mash the baked garlic cloves in with the potatoes. (Now these need the garlic peeled !)
Substitutions
You can add 2 Tbsp of butter to the olive oil used to brown the chicken.
