Mix all ingredients. preheat oven to 400. place cupcake papers in cupcake pan. fill 2/3 full and bake 12-13 minutes. Very nice and light.
These were an experiment when my family ate all the blueberries and come out great!
Can use 2 Tbsp baking powder for baking soda, cream of tartar and tapioca starch.
Can sub "safe" milk or fruit juice.
