Description

The perfect treat for one! This recipe is a base you can customize by adding different flavorings, mis ins, and toppings.

Ingredients
  • 4 tbsp gluten-free flour mix (or all-purpose flour)
  • 2 tbsp sugar
  • 3 tbsp milk alternative
  • 1 tbsp oil
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1 dash flavoring such as vanilla or other extract, spices, etc.
  • 1 tsp mix ins such as mini chocolate chips or sprinkles (optional)
Instructions
  1. Prepare a microwave-safe mug or similar container by wiping the inside with oil. Not absolutely necessary, but makes the mug easier to clean.

  2. Add dry ingredients for the cake to the mug and mix. I find a small fork works well here. 

    If using dry spices for flavor, add at this stage.
  3. Add wet ingredients into the dry and mix until lump free.

    If using vanilla or other extract for flavoring, add now. This would also be the time to add mix ins such as mini chocolate chips or sprinkles for confetti cake.
  4. Microwave on full power 1:15-1:30. 

    Microwaves vary in power level. You may need to experiment to find the optimal time to cooked this mug cake in your microwave. For a low-power microwave (like a dorm microwave/fridge combo), you may find you need more time so the cake cooks through.
  5. Optional: Add toppings like frosting and sprinkles after the cake is cooked and allowed to cool slightly.
