Ingredients

5 slices gluten-free bread
3 small apples, chopped finely
1/4 cup dried cranberries
1/4 cup margarine, melted OR oil
1 cup chicken broth
1 tsp poultry spice
2 Tbsp Ener-G Egg Replacer powder (optional)
1 tsp salt

Directions

Toast bread two times, and chop into small pieces. In large bowl, mix all ingredients together and stuff in turkey. This makes enough to stuff a small turkey.

Notes

Shortcut: I use one bag of Ener-G Gluten-Free stuffing instead of doing toast. It's faster and seems to hold the shape better.

I've also tossed in chopped dates and liked that.

Next time I might add some dried orange peel.
