Ingredients

1 cup oil
3 eggs, beaten
2 zucchini, grated
2 cups flour
1 Tbsp cinnamon
2 tsp baking soda
1/4 tsp baking powder
1 - 2 cups sugar
1 tsp salt
2 tsp vanilla
1 cup nuts (optional)

Directions

Combine oil, beaten eggs and grated zucchini. Mix dry ingredients separately, and then add to the wet mixture and mix well. Stir in nuts and vanilla. Pour into 2 greased loaf pans. Bake at 350 °F for 1 hour. Remove to wire racks to cool.

Notes

I cut it into slices and put it in snack size ziplocs then in a big freezer ziploc.

Substitutions

Can use whole wheat flour. Can reduce amount of sugar to 1 cup.
