1 1/2 cup brown rice flour
1 cup white rice flour
1/2 cup tapioca flour
2 Tbsp baking powder
1/2 tsp xanthan gum
3 Tbsp sugar
1/2 tsp salt
2 Tbsp brown sugar
1/4 tsp vanilla
3 Tbsp oil
2 1/2 cups milk substitute
Mix ingredients and cook in sprayed waffle maker until done.
This makes a slightly sweet, fluffy waffle. We usually eat them plain.
You can do quite a bit of tinkering with the flours as long as you keep the tapioca flour and xanthan gum.
You can also use about any liquid you like. I have even substituted 1/2 cup of the rice flour with coconut flour and increased the liquid.
