Ingredients

1 3/4 cup flour
2 tsp arrowroot (optional)
1/4 cup brown sugar
3/4 cup white sugar
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp vanilla
1 tsp lemon juice or vinegar
5 Tbsp oil
1 cup cold water

Directions

Preheat oven to 350 °F. Grease an 8×8″ pan. Mix dry ingredients in a medium bowl. Add liquid ingredients and beat for 2 minutes. Pour into pan and bake for 30-35 minutes or until a knife inserted comes out clean.

Notes

This cake is heavy but moist. It reminds me of banana cake, without the banana.
