Ingredients

2 medium sweet potatoes, baked
8 oz dry lentils, rinsed
1 medium carrot, peeled and finely chopped
1 small onion, finely chopped
1 stalk celery, finely chopped
2 Tbsp maple syrup
2 -3 slices whole grain bread, broken into small pieces
to taste ground pepper
1 Tbsp olive oil

Directions

Boil 4 or 5 cups of water in a saucepan. Put in lentils, carrot, onion, and celery, bring to a boil, and simmer, partially covered, until lentils are cooked, about 20- 30 minutes. Drain.

Peel and mash cooked sweet potatoes. Add maple syrup and mix. Put in drained lentil mixture and bread pieces, and ground pepper to taste, and mix well.

Heat oil in a large skillet over medium heat. With your hands, make patties from the mixture and cook until browned, a few minutes on each side.

Notes

This recipe is pretty flexible - you can throw in more vegetables if you want. I like to add some frozen spinach.

It's a nice vegetarian/vegan main dish.

Substitutions

I have only made it with wheat bread, but I think any kind would work. I like to use heels.

If avoiding sesame, verify bread ingredients.
