Ingredients

1/3 cup canola oil or Spectrum Shortening
1 cup sugar
3 bananas, mashed
2 eggs, OR 2 additional mashed bananas
2 cups millet flour
1 tsp baking soda
1/4 tsp salt

Directions

Mix oil, sugar, bananas. Add millet, baking soda and salt.

Mix well, spoon into mini muffin tin.

Bake at 350 °F for about 20 minutes. Check for doneness with toothpick.

They need to cool completely before you even try to get them out of the cupcake papers.
