Wheat-Free Bread for Bread Machine

Ingredients

3/4 cup + 3 Tbsp warm water
1 Tbsp canola oil
3 Tbsp sugar
1 tsp salt
1 Tbsp dry milk (see below)
2 1/4 cup flour mix
1 tsp xanthan gum
4 1/2 tsp yeast

Directions

Add ingredients to breadmaker in order listed. Bake on “super rapid” or “rapid rise” setting.

Notes

For the flour mix, I use 1 cup barley flour, 1/2 cup white rice flour, 1/2 cup tapioca starch, 1/4 cup sorghum flour.

Substitutions

Dry milk can be replaced with liquid soy or rice milk.
