Ingredients
1 cup pineapple, diced
1 mango, diced
2 Tbsp fresh mint, chopped
1 Tbsp fresh grated ginger
juice of half a lemon
to taste salt and pepper
Directions
Mix ingredients in a bowl. Taste for sweet/sour and adjust accordingly since sweetness and flavor of fruit varies. Allow to rest in fridge at least 15 minutes for flavors to blend.

Substitutions
Lime juice could be used in place of lemon.
