Tropical Flavored High Calorie Drink

Ingredients

1/3 14 oz can Thai Kitchen Premium Coconut Milk
1/2 cup powdered sugar
1/3 14 oz can regular coconut milk
1 banana, chilled
1 Tbsp frozen pineapple juice concentrate (melted)
1 Tbsp frozen orange juice concentrate (melted)
1/16 tsp xanthan gum

Directions

Blend in blender till smooth and pour into glass. Chill 1 hour or so.

It’s a bit thin at first but will thicken enough to use a spoon when using xanthan.

Each 16 ounce glass has just over 1000 calories. 🙂

Makes great popsicles, too! You can also add 2 Tbsp of oil to add another 240 calories.

Notes

For the 1/3 can Thai Kitchen Premium Coconut Milk, you want the fat portion.

For the 1/3 can regular coconut milk, just shake it and if you hear/feel liquid it will work.

Add more or less of the frozen juice concentrates to taste.

Substitutions

Can substitute 1/2 block soft tofu for the xanthan gum. It’s used to thicken.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy [1], consult your physician to find out if you need to avoid coconut.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
