Sweet Potato Waffles

Ingredients

1 3/4 cups millet flour or garfava flour or brown rice flour (millet preferred)
1/2 cup cornstarch or potato starch
1/4 cup tapioca starch
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 Tbsp sugar
1/2 tsp xanthan gum
2 Tbsp oil
1/2 to 3/4 cup cooked, mashed, sweet potatoes
1 1/4 cup dairy-free milk alternative
1 tsp vanilla

Directions

Combine dry ingredients in a bowl.

In separate bowl, whisk together oil, sweet potato, milk alternative, and vanilla. Add liquid mixture into flour mixture and mix until just blended.

Cook on waffle iron according to manufacturer’s directions.

This makes 7 rectangular Belgian waffles.
