Put water and milk substitute in a saucepan. Let heat briefly, then add salt and grits. Stir occasionally.
When it begins to boil, turn down heat to simmer, cover with lid slightly off the pan, and cook another 5-7 minutes until grits are soft. Continue to stir occasionally.
Remove from heat, cover and let sit 5 minutes. Spoon into serving dishes and add a dab of margarine, then stir in strawberry jam. I prefer this cooled to just above room temperature.
Notes
Substitutions
You can use your favorite jam, and safe milk substitute.
Grits are ground corn. There should be nothing else in them, but check your brand for possible cross contamination issues.
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Coconut: Although classified by the FDA as a tree nut, coconut is not a common allergen and is not related to tree nuts. If you have a tree nut allergy, consult your physician to find out if you need to avoid coconut.
Milk and Soy Substitutions: Alternative dairy-free milk beverages and products will work in most recipes. Find out more about milk substitutions and soy substitutions.
