Smother Fried Chicken Nuggets

Ingredients

2 lb boneless chicken breasts
1 cup oat flour
1/4 tsp garlic powder
1 tsp salt
1/4 tsp white or black pepper
oil for frying
rice flour
arrowroot (optional)
2 cups water

Directions

Cut chicken in strips or squares. Set aside.

Separately, mix together oat flour and spices. Put oil into deep fryer. Begin heating. Coat chicken with flour mixture and place into hot oil. Cook til brown.

For smother fried chicken nuggets, place fried chicken nuggets aside. Pour excess oil out, leaving enough oil and breading to cover the bottom. Put some rice flour in the pan, whisking on medium heat until it is like a paste. Slowly add 2 cups of water and then cook on medium heat until boiling. Let thicken. If it’s too thin, add some arrowroot mixed in water to it to thicken. When it’s thick enough, add the chicken back into it.

Serve over cooked rice or mashed potatoes.
