Shortening Substitute

Ingredients

1 pinch salt (optional)
1 1/3 cup oil
1/4 cup cold (spring) water
1 lb dairy and soy-free margarine

Directions

Cut margarine into pieces. Put into food processor and turn it on. Slowly add oil through chute. Slowly add water. Add pinch of salt if desired. Mix until smooth.

Notes

I use sunflower oil, nice and light.

This is a shortening substitute and works fine for many things. It cuts down on the amount of hydrogenated fats from straight margarine.
