Rice Flour Chocolate Cake

Ingredients

1/2 cup sugar
2 tsp vanilla
1/8 tsp salt
1 tsp baking soda
1 1/2 cups white rice flour
1/4 cup canola oil
1 Tbsp white vinegar
1 cup cold water or rice milk
6 Tbsp cocoa (not Dutch Processed)
powdered sugar for dusting (optional)

Directions

Combine dry ingredients. In separate bowl, combine wet ingredients. Fold ingredients together until just combined. Bake at 350 °F in prepared 8X8 inch pan for 25-30 minutes, or until toothpick comes out clean. Dust with powdered sugar or top with your favorite icing.

This is a variation of Wacky Cake made with all rice flour.
