Ingredients
1/2 tsp salt
1/4 tsp pepper
3 Tbsp olive oil
2 tsp cumin
2 tsp coriander
1 med carrot, grated
2 cups quinoa, cooked
1 large sweet potato, baked and mashed
1 cup chopped spinach, fresh or frozen
1 cup lentils, cooked
Directions
Combine all ingredients in a bowl, reserving 2 T of the olive oil for cooking later. Shape mixture into 6 patties and chill in the fridge for about an hour. Heat the remaining 2 T olive oil in a large skillet. Cook the patties in the oil, about 4 or 5 minutes on each side or until they start to brown.
