Potato and Ham Soup

Ingredients

3 Tbsp safe oil
2 large onion, diced
6 large potatoes, diced
6 cups water (optional)
2 tsp sea salt
1 Tbsp dried basil
1 Tbsp dried thyme
fresh ground pepper, to taste
2 tsp potato starch (optional)
1/4 cup water (optional)
1 cup ham, diced

Directions

Heat oil in large pot, saute onions until tender.

Add remaining ingredients. Bring to a boil, then lower heat and simmer for 45 minutes or until potatoes are tender.

Remove 1/2 (or more) of the potatoes and onions and puree in a blender or food processor. Stir into soup. Add diced ham.

If the soup is still thinner than desired, dissolve potato starch (or other thickener) in water, add to soup.

Continue to simmer until heated through and it reaches desired consistency.

Notes

This is also a wonderful soup for a crockpot. Saute onions in oil, then combine all ingredients in a slow cooker. Cook on low for 12 hours, or on high for 6-8, or until potatoes are tender. Continue with instructions as above.

Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn.
