Ingredients

1 1/2 cups oat flour
1/2 cup potato starch or tapioca starch
2 Tbsp sugar
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
2-3 Tbsp cider vinegar
2 cups milk or dairy-free milk alternative
2 egg whites or equivalent replacement, whipped to soft peaks
1/3 cup oil

Directions

Mix all dry ingredients together.

Mix cider vinegar with enough safe milk substitute to make 2 cups. Mix oil to wet ingredients and add the wet ingredients gradually to dry ingredients.

Finally fold beaten egg replacer into mixture. Cook on Belgian waffle iron for about 5 minutes.

Notes

My only problem with oat flour is that it is very sensitive to humidity.
