Ingredients

1 1/2 cup oat flour
3/4 cup potato starch or tapioca starch
1/2 tsp salt
1/4 tsp baking powder
1 cup margarine
3/4 cup sugar
1 Tbsp Ener-G Egg Replacer
2 Tbsp water
1 tsp vanilla

Directions

Preheat oven to 375 F.

Sift together dry ingredients. Cream margarine and sugar. Mix together egg replacer and water and add. Gradually blend in flour mixture. Chill dough for 1 hour.

Fill cookie press and form cookies on ungreased cookie sheet. Bake 10-12 minutes (varies from oven to oven). Leave on cookie sheet for a few minutes before transferring to cooling rack.
