Ingredients

1/4 cup oat flour
1-2 Tbsp oil
1-2 Tbsp sugar (optional)
water
salt

Directions

In a small bowl, mix flour, 1-2 Tbsp oil, and enough water to make mixture soupy, like thin pancake batter. Add 1-2 tablespoons of sugar for a sweeter puck.

On stove top, coat flat pan with thick layer of oil. Pre-heat pan. Pour pancake sized dollups of batter onto pan. Cook and flip until browned. Drain oil from pucks on paper towel. Salt to taste.

Crisp in the toaster if desired. (Be careful if you’ve used a lot of sugar – it burns.)
