Ingredients

1 cup oat flour
1/2 tsp salt
3 tsp baking powder
1 Tbsp sugar
2 Tbsp margarine
1/3 cup cold water
1/8 tsp xanthan gum (optional)

Directions

Preheat oven to 400 °F.

Stir together dry ingredients; cut in margarine until size of peas. Add cold water; stir gently to form soft dough. Knead lightly on board dusted with oat flour.

Roll out dough to 1/2-inch thickness. Cut with 1 1/2-inch cutter and place on ungreased cookie sheet.

Bake 15-20 minutes.

Notes

This worked really well as the topping for a pot pie. I just flattened it by hand between some waxed paper and then place it over the wet ingredients.

Substitutions
