No Tomato Manicotti

Ingredients

2 tsp chili powder
1/4 cup water
1/2 onion, chopped
1 lb ground beef
2 tsp oregano
1 15 oz can dark red kidney beans
1 16 oz can refried beans
1 8 oz pkg manicotti shells
2 4 oz jars pimento
2 cups sour cream
1 small can sliced black olives
2 cups shredded cheese (cheddar or Colby Jack)

Directions

Brown hamburger and onion. Add refried beans, chilli powder, and oregano. Heat through (this will make the beans more liquid). Remove from heat and set aside.

In a blender combine kidney beans and pimento. Blend well. Add water. Blend again. Set aside.

Stuff the manicotti with the meat mixture and place in a greased 13x9x2 inch baking dish.

Pour the blender mixture over the stuffed manicotti.

Cover and bake at 350 °F for one hour.

Uncover, and spoon sour cream over the top. Sprinkle cheese on top. Sprinkle olives on top.

Bake 5-10 minutes longer until cheese is melted.

Notes

For a Mexican flavor, add 1/4 cup taco seasoning to the blender.

For an Italian flavor, omit the chili powder and add 1 Tbsp Italian seasonings.

Be sure to carefully check the pimentos, refried beans and chili seasoning.
