Ingredients
1 1/2 lb ground meat (beef or turkey or pork)
1 cup old fashioned rolled oats
1 cup reduced salt tomato juice (or ketchup)
1 med onion, chopped
1 stalk celery, chopped
1 clove garlic, minced
1 tsp salt
1 tsp pepper
1/2 tsp sage
2 10 oz pkgs frozen chopped spinach, thawed and squeezed dry
Directions
Preheat oven to 350 °F and spray baking sheet with cooking spray.
In large bowl mix all ingredients except spinach.
On sheet of waxed paper shape meat mixture into 1/4″ thick rectangle. Spread spinach over meat rectangle, leaving 1″ border around.
Using a short end, roll mixture up into a jelly-roll. Pinch seams to seal.
Place meatloaf seam side down on prepared baking sheet. Bake 1 hour. Place on cutting board. Let stand 5 minutes. Slice and serve.

Substitutions
Alternatives to spinach:
– chopped broccoli
– 2 cups sauteed mushrooms plus 1/2 cup ham
Check your ground meat for any additives, especially if using ground turkey which usually has added flavorings. Ground pork sometimes has added lemon juice.
Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains.
