Ingredients

3/4 cup shortening
2/3 cup sugar
3 Tbsp oil
1 tsp cream of tartar
3/4 cup dark molasses
2 cups brown rice flour
3/4 cup sweet rice flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tsp xanthan gum
1/2 tsp ground cloves
3/4 tsp salt
1 cup cold water
2 Tbsp apple cider vinegar

Directions

Cream shortening and sugar. Add oil and cream of tartar. Beat in molasses.

In separate bowl, sift dry ingredients. Stir into batter along with the water.

Mix well. Pour into round cake pan and bake 1 to 1 1/2 hours. Let pan cool 5 minutes before turning to rack to cool.
