1 1/2 cups flour
3 Tbsp cocoa powder (optional)
1 cup sugar
1 tsp baking soda
1/2 tsp salt
Combine ingredients thoroughly and store in airtight container or Ziploc baggie.
To make one cupcake:
Preheat oven to 350 °F.
Combine 1/4 cup of the dry mix with:
2 tsp oil
2 Tbsp water
1/8 tsp vanilla
1/8 tsp vinegar
Pour into one lined cupcake tin. Bake in oven 20 minutes or until tests done.

This has not been tried with the gluten free version of the mix.
