Ingredients

3/4 cup millet or rice flour
1/2 cup potato, tapioca, or corn starch
2 tsp baking powder
1/4 tsp xanthan gum
1/2 tsp salt
2 Tbsp vanilla
2 Tbsp oil
1 Tbsp apple cider vinegar
3/4 cup water or dairy-free milk alternative
1 cup applesauce

Directions

Mix dry ingredients. Add wet ingredients. Mix thoroughly.

Pour by quarter cupfuls into Belgian waffle iron and cook for about 5 minutes.

Substitute one mashed banana for apple sauce.
