Ingredients
stalks from 2 heads of broccoli
2 potatoes, peeled and halved
1 1/2 quarts chicken broth
to taste garlic
2 onions, sliced thin
to taste salt and pepper
Directions
Pan fry onions to caramelize. Set aside.
Boil broccoli and potatoes in broth until everything is soft enough to yield to a knifepoint. Place stalks and about 1 cup broth in blender and puree. Return to pot.
Place the potatoes and about 1 cup of broth in blender and puree. Return to pot.
Place onions in blender with about 2 cups of soup and puree. Put into pot.
Salt and pepper to taste.
Notes
Meg used a total of 4 potatoes when cooking the brocolli and potatoes. She tossed out other 2 potatoes which were used to sop up extra salt.
Meg used about 1/4 cup dried roasted garlic chips.
