Ingredients

1/4 cup nut butter filling
1 lb powdered sugar
1/4 cup boiled white potatoes

Directions

Mash the potatoes with the box of powdered sugar until it makes a dough. Pat dough out on a sheet of wax paper. Spread of thin layer of nut butter over the dough, and roll it up jelly-roll style. Wrap and refrigerate overnight.

To serve: slice the roll into 1/2 inches slices.

Notes

The dough is very sweet, so alternative filling would need to be not-so-sweet.

Substitutions

The original recipe uses peanut butter, but you can substitute soynut butter or sunflower butter.
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.
Corn Substitutions: Corn is a common ingredient in products. Starch, modified food starch, dextrin and maltodextrin can be from corn. Consult with your physician to find out which corn derivatives you need to avoid. Many corn-free options are available in the US. Find out more about corn substitutions.
