Ingredients

1 1/2 cups rice flour
1/2 cup sugar
1 tsp baking soda
1/4 tsp unbuffered vitamin C crystals
2 Tbsp (approximately) apple juice
1/4 cup oil
2 large bananas, mashed

Directions

Mix dry ingredients in a large bowl.

In a large measuring cup, mix oil and bananas.

Stir banana mixture into flour mixture, and add apple juice (may need a bit more than 2 Tbsp) until mixture is moist.

Put into 8″ cake pan and bake at 350 °F for 25-30 minutes until golden brown.

May instead be baked as muffins at 350 °F for 18-20 minutes. Will make 18 muffins.

Substitutions

May substitute orange juice for the apple juice and vitamin C crystals.

Be sure to use unbuffered vitamin C crystals and not buffered. Most vitamin C crystals are corn-derived. The vitamin C crystals are to activate the baking soda, so another equivalent acid could be substituted. This could be vinegar, lemon juice, cream of tartar, etc.

Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains.
