Ingredients

1 1/2 cups all purpose flour
1 cup rolled oats
3/4 cup white sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp Ener-G Egg Replacer powder
2 Tbsp warm water
3/4 cup soy or rice milk
1/3 cup vegetable oil
1/2 tsp vanilla extract
1 cup mashed bananas
1/4 cup chocolate chips (optional)

Directions

Combine flour, oats, sugar, baking powder, soda and salt.

Combine Egg Replacer powder and warm water until dissolves. Add soy or rice milk, vegetable oil, vanilla and mashed bananas.

Combine wet and dry ingredients. Add chocolate chips.

Pour into 12 muffin cups. Bake for 15 minutes at 400 °F.
