Ingredients

2 cups shredded potatoes
1 tsp xanthan gum
corn oil

Directions

Sprinkle a little xanthan gum on potatoes and mix. Sprinkle on a littler more and mix again.

Fry in oil.

Notes

My daughter’s religious school teacher says the xanthan gum works for sweet potato or zucchini latkes too.

Substitutions

Can use the preshredded potatoes from the grocery store, but check the ingredients to make sure they are safe for you.
