Kid Friendly Taco Meat

Ingredients

2 tsp chili powder
1/2 tsp salt
1 onion, chopped
1 1/2 lb ground beef
1 small clove garlic, minced
1 red pepper, chopped
1/4 tsp ground cumin
2-4 Tbsp ketchup (optional)
1 11 oz can vacuum packed corn

Directions

Saute onion, garlic, red pepper and ground beef until meat is browned. Drain.

Add liquid from canned corn, chili powder, cumin, and salt. Simmer for 10 minutes, or until water is absorbed, then add the corn and simmer until heated.

If desired, add a little ketchup (2-4 Tbsp). Stir thoroughly until heated.

Notes

I serve this over rice. Or send it for lunches with salad greens and taco sauce to make a taco salad.
