Kathy P’s Mock Rice A Roni

Ingredients

1 cup long grain rice
1/4 cup angel hair pasta, broken into small pieces
2 cups chicken stock, preferably homemade
1/4 cup celery, minced
1/4 cup onion, minced
2 Tbsp olive oil
1/8 tsp poultry seasoning
1/8 tsp ground celery seed
2 Tbsp dried parsley flakes

Directions

Heat olive oil in a heavy saucepan. Saute celery and onion until softened.

Add rice and pasta and toss to coat in oil. Saute until slightly browned. Add remaining ingredients.

Bring to boil, cover and reduce heat. Simmer 15 minutes.

Let stand for 5 minutes.

This comes out pretty dry and not “soupy” like boxed Rice a Roni. If you want it more soupy, add another 1/2 cup liquid.

Substitutions

Use any stock that is safe for your needs. Homemade tastes bests, but canned works just fine.

To make beef flavored, use beef stock and replace poultry seasoning with a pinch of thyme.
