1 cup rice syrup or maple syrup
1 1/2 tsp vanilla
1 1/2 cups mashed bananas
1 1/2 cups water
1/2 cup oil
2 Tbsp baking powder
3 cups oat flour
1 1/2 cups potato starch
1 1/2 cups rice flour
Preheat oven to 325. Oil pans. Combine syrup, vanilla, mashed banana, water, and oil. Mix well with spoon by hand or with an electric mixer on low. Add baking powder and mix well. Add oat, potato starch and rice flours and mix well.
Divide batter equally between two pans. Bake for 70 minutes or until inserted toothpick comes our clean.
Leftover cake can be used to make
Zweiback.
