Ingredients
2 2/3 cup cooked rice
1/3 cup minced onion
2 eggs, beaten
2 Tbsp melted butter
1 8 oz can tomato sauce
1/4 tsp oregano
1/4 tsp basil
1 cup shredded mozzarella cheese
pizza toppings of choice
1/2 cup sliced stuffed olives (optional)
Directions
Mix together rice, onion, eggs, and melted butter, make sure mixture is mixed well.
Line a 12 inch greased pizza pan with the rice mixture and bake it for about 12 minutes at 350 °F., or until it is set.
Mix tomato sauce with a little cheese spoon and spread over rice crust. Now, sprinkle with safe spices and cheese. Add additional “safe” toppings and olives.
Bake at 350 °F for 20-25 minutes or until toppings are heated and cheese is melted.
After removing from the oven, allow to stand a few minutes before cutting.
