Ingredients

3 cans garbanzo beans, drained
3-4 Tbsp tahini (sesame paste) (optional)
4-6 cloves garlic, chopped
1 lemon or lime, juiced
1/3 cup good quality olive oil
to taste salt and pepper
parsley (fresh flat) (optional)

Directions

Saute the chopped garlic in small amount of olive oil over a low flame.

Juice the lime or lemon.

Place all the ingredients, except parsley, in a large blender. Blend well. This could take several minutes. Your hummus will be thick and have a dry consistency.

Add water in about 1/8 cup increments and blend until the desired consistency. Should be thick but not like paste, nor should it be watery.

Spoon the hummus in a bowl and garnish with fresh flat parsley (not cilantro). Just before eating or serving, make an indentation in the center of the hummus plate and pour a small amount of a “good” olive oil in the indentation. Fresh homemade pita bread on the side is the best, but crackers or another safe bread may be used.

This is good served promptly, but it is much better if it sits overnight in the refrigerator.

Notes

Soy free and corn free ingredients may be used.
