Microwave honey until liquid.
Put honey, vinegars, ginger, garlic, onion, pepper, salt, lime juice, and cilantro in blender. Puree until smooth.
Add olive oil and blend until combined.
Serve with Avocado Wrappers
(Store leftover sauce in refrigerator.)

This dipping sauce was created to go with Avocado Wrappers. It was designed to have a balance of sweet and sour, with cilantro added to complement the avocado in the main dish, and give it a Mexican kick.
