Greek Chicken and Potatoes

1 3.5 lb chicken, cut into pieces
6 medium potatoes, peeled and quartered lengthwise
3/4 cup chicken broth
1/4 cup olive oil
4 cloves garlic, crushed
2/3 cup lemon juice
2 tsp oregano


Preheat oven to 375 °F. Arrange chicken and potatoes in large roasting pan. Season with salt and pepper. Whisk broth, olive oil, garlic, lemon juice and oregano to combine. Pour evenly over chicken and potatoes.

Bake until chicken is cooked through and golden brown, basting occasionally with pan juices, about 1 hour. Remove chicken to a plate and cover to keep warm. Return potatoes to the oven and bake until tender, another 15 minutes.
