Ingredients

1 pkg yeast
2 tsp xanthan gum
1 1/4 cup dairy-free milk alternative
1/4 cup oil
1 1/4 cup cornstarch
1 Tbsp baking powder
1 1/4 cup potato starch
1 tsp salt
2 Tbsp honey or sugar

Directions

Preheat oven to 350 °F.

In a small bowl combine milk alternative with yeast. (For water, mix 1 tsp sugar in water and then add yeast.) Stir to dissolve yeast and set aside.

Combine all dry ingredients. Add wet ingredients and yeast mixture. If using water, add 2 extra tablespoons of water. Mix well. Dough will look wet, thick, and pasty

Place dough in a greased 9 x 5 inch loaf pan. Wet hands and smooth dough, then press an indentation along the center of the length of the loaf.

Bake 25-28 minutes. Test for doneness with a toothpick. Cool briefly before removing from pan. Refrigerate or freeze extra servings.
