Fruit Mini Muffins

Ingredients

3 overripe bananas
1/4 cup oil
3/4 cup sugar
1 tsp baking soda
1 tsp salt
2 cups flour

Directions

Mash bananas. Add oil and sugar. Mix well.

Sift flour, salt and baking soda together and add to banana mixture.

Mix until blended (do not beat).

Pour into mini muffin pans, muffin pans or bread tin and bake at 350 °F until toothpick comes out clean.

About 15 minutes for mini muffins.

Notes

I usually use canola oil.

You can add oatmeal, raisins, chocolate chips, coconut, etc. as well.

Substitutions

You can use 1 1/2 cups baby food to replace the bananas. This is 3 large jars. Banana, pears or plums can be used. Recipe also works with baby food Dutch Apples.

This is the recipe I use unsweetened applesauce with. If you buy the sweetened, adjust the sugar slightly.
