2 cups sugar
2 cups water
1 Tbsp grated lemon zest (optional)
1 1/2 cups fresh lemon juice (from about 6 lemons)


Combine sugar and water in saucepan, bring to boil over medium heat. Reduce heat, simmer until sugar dissolves. Cool completely (Your basic bar syrup). Add lemon juice and zest. Stir. Freeze in ice cream maked according to manufacturer's instructions.

Lemon zest can be omitted if you prefer a smoother texture.
