French Toast, Gluten and Egg-Free

Ingredients

2-4 slices gluten-free rice bread
1 1/2 tsp Ener-G Egg Replacer mixed with 2 Tbsp water, or other egg replacer
2 Tbsp water
1/4 tsp cinnamon sugar
1/4 tsp vanilla
2 Tbsp milk, milk alternative, or water

Directions

Mix all ingredients, except bread, thoroughly. Dip slices of bread in, but don’t let them soak it up. Place in hot skillet sprayed with non-stick spray or oil. Cook each side about two minutes, then sprinkle with extra cinnamon sugar. Serve with cane syrup, maple syrup or honey.

Notes

Mary uses 1 1/2 tsp EnerG Egg Replacer mixed with 2 Tbsp water. She uses Food For Life Brown Rice Bread.

Member kktk makes this same French Toast using 1 Tbsp oil (melt down safe margarine), 1 Tbsp water and 1 tsp baking powder. She uses Food For Life White Rice Bread.
