Ingredients

1 cup gluten-free flour blend
3/4 cup sorghum flour
1/2 cup brown sugar
3/4 tsp guar gum
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1/2 cup milk alternative
1/3 cup canola oil
1/2 cup applesauce
1 Tbsp canola oil
2 Tbsp water
1 tsp baking soda

Directions

Mix together 1 Tbsp canola oil, 2 Tbsp water, and 1 tsp of baking soda together. Set aside. Mix dry ingredients. Mix together remaining ingredients and add to dry ingredients being careful not to overmix.

Scoop into greased muffin tins. Bake at 350 °F or until golden and top springs back when gently pressed, about 20 minutes.
